Ingredients:
For the meatloaf:

1 ½ lbs ground beef

1 small onion, finely chopped

2 cloves garlic, minced
-
1 cup breadcrumbs (plain or Italian-style)

1 egg, beaten
-
¾ cup milk
-
2 tbsp Worcestershire sauce
-
2 tbsp ketchup
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp dried thyme (optional)
For the glaze:

½ cup ketchup
-
2 tbsp brown sugar
-
1 tbsp mustard (yellow or Dijon)
Instructions:

Preheat oven to 375°F Lightly grease a loaf pan or line with parchment paper.

In a large bowl, combine all meatloaf ingredients: ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix until just combined—don’t over-mix or it’ll get tough.

Transfer mixture into the prepared loaf pan and shape into a loaf.

Mix glaze ingredients in a small bowl: ketchup, brown sugar, and mustard. Spread half of the glaze evenly over the top of the meatloaf.

Bake for 40 minutes. Then spread the remaining glaze on top and bake another 15–20 minutes, or until internal temperature reaches 160°F.

Rest for 10 minutes before slicing so it holds together well.
Optional Add-Ins:

Chopped green bell pepper

Finely shredded carrot
-
Swap beef for ground turkey or a beef/pork mix
