Ingredients:
1 lb ground beef
3 medium potatoes, diced small
1 cup veggie (Primavera Mistura)
2 cloves garlic, minced
1 tsp paprika
1/2 tsp salt (adjust to taste)
1/2 tsp black pepper
1 cup shredded cheddar cheese (optional)
1–2 tbsp oil (for cooking)
Fresh parsley or green onions for garnish (optional)
Instructions:
Cook the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Break it up as it cooks. Drain excess fat and set aside.Saute the Potatoes:
In the same skillet, heat 1–2 tbsp of oil. Add the diced potatoes and cook for about 10–12 minutes, stirring occasionally, until they begin to soften and turn golden.Add Veggies:
Stir in the veggies. Cook for another 3–4 minutes until they are soft.Combine and Season:
Return the cooked beef to the skillet. Add paprika, salt, and pepper. Stir everything together and cook for another 2–3 minutes to heat through and combine flavors.Add Cheese (Optional):
Sprinkle shredded cheese over the top and cover the skillet with a lid for a few minutes until melted.Garnish and Serve:
Top with chopped parsley or green onions if desired. Serve hot!
