Ingredients:
-
1/2 cup natural peanut butter (creamy or crunchy)
-
1/3 cup honey
-
1 egg
-
1/2 tsp vanilla extract
-
3/4 cup all-purpose flour
-
1/4 tsp baking soda
-
Pinch of salt
-
1/3 to 1/2 cup chocolate chips or chopped chocolate
Instructions:
-
Preheat oven to 350°F (175°C).
Grease or line an 8x8" baking pan with parchment paper. -
In a bowl, whisk together the peanut butter, honey, egg, and vanilla until smooth and glossy.
-
In another bowl, stir together the all-purpose flour, baking soda, and salt.
-
Combine the dry ingredients with the wet mixture and stir until just combined. It’ll be a thick dough.
-
Fold in the chocolate chips.
-
Press the dough evenly into the prepared pan (use damp fingers or the back of a spoon to help spread it out).
-
Bake for 16–20 minutes, or until the top is golden brown and a toothpick comes out clean or with just a few crumbs.
-
Let cool completely before slicing — they'll firm up more as they cool!
Option 1: Melted Chocolate Topping (Post-Bake Glaze Style)
Perfect for a smooth, glossy chocolate layer on top
After baking:
-
Once the bars are baked and slightly cooled, melt about 1/2 cup of chocolate chips (or chopped chocolate) with 1 tsp oil or butter for smoothness.
-
Microwave in 20-second bursts, stirring in between, until melted and smooth.
-
-
Pour or spread the melted chocolate evenly over the cooled bars.
-
Let it set at room temp or in the fridge until the chocolate firms up, then slice.
