Baked Peanut Butter Chocolate Bars

Ingredients:

  • 1/2 cup natural peanut butter (creamy or crunchy)

  • 1/3 cup honey

  • 1 egg

  • 1/2 tsp vanilla extract

  • 3/4 cup all-purpose flour

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/3 to 1/2 cup chocolate chips or chopped chocolate

Instructions:

  1. Preheat oven to 350°F (175°C).
Grease or line an 8x8" baking pan with parchment paper.

  2. In a bowl, whisk together the peanut butter, honey, egg, and vanilla until smooth and glossy.

  3. In another bowl, stir together the all-purpose flour, baking soda, and salt.

  4. Combine the dry ingredients with the wet mixture and stir until just combined. It’ll be a thick dough.

  5. Fold in the chocolate chips.

  6. Press the dough evenly into the prepared pan (use damp fingers or the back of a spoon to help spread it out).

  7. Bake for 16–20 minutes, or until the top is golden brown and a toothpick comes out clean or with just a few crumbs.

  8. Let cool completely before slicing — they'll firm up more as they cool!

Option 1: Melted Chocolate Topping (Post-Bake Glaze Style)

Perfect for a smooth, glossy chocolate layer on top

After baking:

  1. Once the bars are baked and slightly cooled, melt about 1/2 cup of chocolate chips (or chopped chocolate) with 1 tsp oil or butter for smoothness.

    • Microwave in 20-second bursts, stirring in between, until melted and smooth.

  2. Pour or spread the melted chocolate evenly over the cooled bars.

  3. Let it set at room temp or in the fridge until the chocolate firms up, then slice.
