Ingredients:
1 lb fish (cod, haddock, tilapia, or canned tuna/salmon)
1 cup breadcrumbs (fresh or dried)
2 eggs, beaten
1/2 cup milk
1 small onion, finely chopped
1 celery stalk, finely chopped (optional)
2 tbsp chopped parsley or dill
1 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
1/4 cup grated cheese (optional topping)
Instructions:
Preheat Oven to 350°F. Grease a loaf pan or line it with parchment paper.
Cook Aromatics: In a skillet, saute the onion and celery in a little oil or butter until soft (about 5 minutes). Let cool slightly.
Combine Ingredients: In a large bowl, mix the fish, breadcrumbs, sauteed veggies, parsley, lemon juice, salt, pepper, and paprika. Stir in the beaten eggs and milk. Mix well.
Transfer to Pan: Spoon the mixture into the prepared loaf pan and smooth the top. If using cheese, sprinkle it on now.
Bake: Bake for 45–55 minutes, or until the loaf is firm and golden on top.
Cool Slightly & Serve: Let it rest for 10 minutes before slicing. Serve warm or cold with tartar sauce, salad, or mashed potatoes.
