Fish Loaf

 

Ingredients:

  • 1 lb fish (cod, haddock, tilapia, or canned tuna/salmon)

  • 1 cup breadcrumbs (fresh or dried)

  • 2 eggs, beaten

  • 1/2 cup milk

  • 1 small onion, finely chopped

  • 1 celery stalk, finely chopped (optional)

  • 2 tbsp chopped parsley or dill

  • 1 tbsp lemon juice

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika (optional)

  • 1/4 cup grated cheese (optional topping)

Instructions:

  1. Preheat Oven to 350°F. Grease a loaf pan or line it with parchment paper.

  2. Cook Aromatics: In a skillet, saute the onion and celery in a little oil or butter until soft (about 5 minutes). Let cool slightly.

  3. Combine Ingredients: In a large bowl, mix the fish, breadcrumbs, sauteed veggies, parsley, lemon juice, salt, pepper, and paprika. Stir in the beaten eggs and milk. Mix well.

  4. Transfer to Pan: Spoon the mixture into the prepared loaf pan and smooth the top. If using cheese, sprinkle it on now.

  5. Bake: Bake for 45–55 minutes, or until the loaf is firm and golden on top.

  6. Cool Slightly & Serve: Let it rest for 10 minutes before slicing. Serve warm or cold with tartar sauce, salad, or mashed potatoes.
