Ingredients:
2 chicken breasts, sliced thin
2 cups pasta (penne, fettuccine, or your favorite)
1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Optional: A bag of mix veggies
Instructions:
Cook the pasta according to package instructions. Drain and set aside.
Season the chicken with salt, pepper, and Italian seasoning, or what ever seasoning you want.
In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through (about 5–7 minutes). Remove and set aside.
In the same skillet, saute garlic for about 30 seconds.
Pour in cream and chicken broth. Stir and bring to a gentle simmer.
Add Parmesan cheese and stir until the sauce thickens slightly.
Return the chicken to the skillet. Add optional veggies if using. Cook for 2–3 minutes.
Toss in the cooked pasta, mix everything together, and simmer for 2 more minutes.
Taste and adjust seasoning. Serve warm with extra Parmesan on top.
